Pecan Pie Mini Muffins

1 cup packed brown sugar 1/2 cup all-purpose flower 1 cup chopped pecans 2/3 cup butter, melted (no substitutes) 2 eggs (beaten) Combine brown sugar, flour, pecans and salt. In another bowl, combine butter, eggs and vanilla, mix well. Stir into flour mixture until moistened.  Grease and flour a muffin pan, or use paper muffin cups. Fill 2/3 full and bake at 350*f for 20-25 minutes or until muffins test done. Do not over bake. Remove immediately to cool on wore rack. Makes 2-2 1/2 dozen

Pecan Log

1 jar of marshmallow cream (7 oz.) 1 lb. confectioners' sugar/10x powered sugar 1 tsp. vanilla extract 1 lb. caramels  Combine marshmallow cream, sugar and vanilla. Knead together until firm. Shape into 5 logs. Wrap in wax paper and freeze. Melt caramels and 1 tbs. of water using a double boiler.   Dip frozen rolls into melted caramels then roll in chopped pecans. Firmly press pecans into caramel.

Salty Roasted Pecans

Total time - 30 - 35 minutes Ingredients 4 cups of shelled pecan halves 1 stick of butter Large frying pan 15"x11" oven pan Paper towels Newspaper Directions Preheat oven to 300 degrees Layer newspaper with paper towels on top on counter Melt Butter in frying pan on low heat Add pecans to melted butter and stir Spread pecans in single layer on oven pan Bake for 15 minutes then stir and coat with butter in pan Bake additional 10 minutes, stir and coat again Check/stir in 5 minute increments until pecans are golden and smell toasty  Remove from oven and spread in single layer on paper towels Sprinkle with salt and toss until salted to liking Allow to cool...

Pecan Pie

2 shallow pie shells (Pet-Ritz)3 large eggs1½ cups light Karo syrup½ cup sugar2 T. plain flour⅛ tsp. salt2 T. melted butter, cooled1 tsp. vanilla extract2½ c. Lightly Toasted Pecans, chopped1. Preheat oven to 325º2. Remove pie shells from freezer, separate and allow to come to room temperature.3. Beat eggs with mixer until frothy. 4. Add syrup and vanilla, beating until well mixed.5. Add butter. Mixing until blended.6. Stir together the flour, sugar, and salt, until lumps are removed.7. Add to syrup mixture. Mix thoroughly.8. Spread 1¼ cups of chopped nuts in each of the two pie shells.9. Slowly pour syrup mixture over the nuts, dividing equally.10.Bake for 45 minutes or until golden brown. Be careful not to over bake.11.Cool completely...
